Pumpkin Bread

15 oz can pumpkin puree
4 large eggs
1/2 Tbsp. vanilla
1/2 c. vegetable oil
1/2 c. applesauce
2/3 c. water
3 c. sugar
3 1/2 c. flour
2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. pumpkin pie spice

1. Preheat oven to 350F.
2. Grease 3 7x3 loaf pans and set aside.
3. Mix together wet ingredients in a medium bowl. In a large bowl, mix dry ingredients and gradually add to wet mixture until just blended.
4. Pour into the prepared pans.  Bake 50-60 minutes until toothpick comes out clean.
